Stephen Daniells
Science Editor, NutraIngredientsStephen Daniells is the science editor for Decision News Media's flagship titles NutraIngredients, NutraIngredients-USA, FoodNavigator and FoodNavigator-USA. He has been writing extensively about nutrition science and food science for almost five years.
Stephen has a BSc and a PhD in chemistry from Queen's University, Belfast and held post-doctoral research positions at the Technical University of Delft (Netherlands) and the University of Montpellier (France).
Dr Mary Gilsenan
Head of Regulatory Services, Leatherhead Food Research
Mary holds a BSc in Human Nutrition from the University of Ulster, Northern Ireland and a PhD from Trinity College Dublin. She spent five years at the Institute of European Food Studies, Dublin and subsequently moved to the food industry (Unilever) where she was based in the Netherlands and the UK. Whilst working in R&D, she set-up and managed human studies to substantiate health claims, and then moved to a communication role with a remit to ensure that all claims and communications relating to a tea brand were legally permitted. Mary joined Leatherhead Food Research in June 2009 as Head of Regulatory Services which consists of twenty multi-lingual regulatory advisors covering some 100 countries. She has published several scientific papers and peer-reviewed several others, and writes regulatory columns in food and drink magazines.
Dr Regina Goralczyk
Senior Project Manager, DSM Nutritional Products Ltd
Dr. Regina Goralczyk joined her company, the world's leading supplier of vitamins, carotenoids and other fine chemicals to the feed, food, pharmaceutical and personal care industries (earlier Roche Vitamins Ltd, now DSM Nutritional Products Ltd., Basel at Switzerland) in 1989. She remained in active science in Human Nutrition until March 2006, when she became a professional senior project manager. Among other projects, she is now responsible for Research and Development of nutraceuticals for the Beauty Supplement and Functional Food Market. Regina Goralczyk's scientific expertise focuses on the molecular and in vivo functions of food ingredients for skin health, i.e. sun-protection and anti-aging. Her major expertise is the health benefits of carotenoids in general and in particular their function in skin photoprotection. She is author of various journal articles in this field, and has recently published a book chapter on Carotenoid Photoprotection in the Carotenoids Handbook Series Vol No. 5.
Peter Hollman
Associate Professor, RIKILT - Institute of Food Safety and Wageningen University
Peter Hollman is a senior research scientist at RIKILT, and an associate professor at the Division of Human Nutrition, Wageningen University, the Netherlands. Main areas of interest are the determination, occurrence and health effects of bioactive compounds in plant foods. Special interests are the analysis of dietary polyphenols in foods and biological fluids, and the elucidation of their potential role in disease prevention. Projects focus on dietary exposure, epidemiological evaluation, human bioavailability and metabolism of flavonoids and lignans. Factors influencing their absorption from the gastrointestinal tract are studied. Animal models are used to study bioavailability and mechanisms of intestinal transport. In addition, studies on cellular uptake and cellular metabolism are carried out in connection with high-throughput genomics tools to study effects of bioactives on metabolic pathways. He has published over 105 papers in peer-reviewed journals, citied more than 11000 times.
Dr Christina Khoo
Research Sciences Senior Manager, Ocean Spray Cranberries
Christina Khoo, PhD, is Research Sciences Senior Manager at Ocean Spray Cranberries, Inc. in the department of Research and Development. Christina received her doctorate with emphasis on nutritional biochemistry and mineral metabolism at the Food Science and Human Nutrition Department, University of Florida. She completed a postdoctoral fellowship at Harvard School of Public Health where she conducted human clinical trials in the area of cholesterol and triglyceride metabolism. Prior to joining Ocean Spray, Christina was a Senior Scientist at Hill's Pet Nutrition, Inc. where she designed functional food using nutrigenomics research tools resulting in several patents. Christina is a member of the American Society of Nutritional Sciences and American Dietetic Association. Her current research interest is focused on cranberry polyphenols and the whole spectrum of cranberry health benefits.
Karen Schaich
Associate Professor, Dept of Food Science, Rutgers UniversityKaren Schaich holds a BSc in Interdisciplinary Science from Purdue University and a ScD in Food Chemistry from Massachusetts Institute of Technology. Her research has focused on free radical reactions involved in oxidation of lipids, proteins, and biological materials. After 14 years studying oxidation roles in pathologies in the Medical Dept at Brookhaven National Laboratory, she moved to academia and extended her research on oxidative degradation to foods, antioxidants, and packaging. In response to requests from industry, she developed and presented several training courses in antioxidant assays, including a week-long "hands on" laboratory practicum. She also is a highly-recognized educator, regularly teaching four courses in food chemistry and receiving more than 12 awards from the campus to national level.
Prof Wilhelm Stahl
Professor of Biochemistry, Henrich-Heine-University of DüsseldorfDr. Wilhelm Stahl studied Chemistry at the University of Heidelberg. He went on to receive his PhD at the University of Kaiserslautern, Institute of Food Chemistry and Environmental Toxicology in 1987. In 1987 Wilhelm joined the Institute of Pharmacokinetics and Metabolism, E. Merck, Darmstadt as research Scientist. Wilhem joined the Physiological Chemistry department of Heinrich-Heine-University, Düsseldorf where he held positions initially as a research scientist then as a reader. Wilhelm currently holds the position of Professor for Biochemistry at the Heinrich-Heine-University, Düsseldorf where he undertakes research into preventive effects of dietary antioxidants against degenerative diseases, Biokinetics of lipophilic antioxidants, Antioxidant mechanisms of carotenoids and vitamin E, Effects of antioxidants on gap junctional communication and Photoprotective effects of dietary components.
Dr David Vauzour
Post-Doctoral Fellow, The University of Reading
Dr David Vauzour received his PhD from the University of Montpellier (France) in 2004 and is currently a post-doctoral fellow in the department of Food and Nutrition Sciences at the University of Reading (UK). His research has involved the fields of oxidative stress, free radical biochemistry, neurodegeneration and the health effects of dietary polyphenols, such as flavonoids. His initial work focused on the elucidation of cellular and molecular mechanisms underlying the toxicity exerted by endogenously formed compounds, as well as exogenous agents, believed to be involved in various degenerative diseases such as Parkinson's and Alzheimer's disease. His recent interests concern how polyphenols influence brain health through their interactions with specific cellular signallig pathways pivotal in protection against neurotoxins, in preventing neuroinflammation and in controlling memory, learning and neuro-cognitive performance.
